This morning, well it was closer to lunch than breakfast, but still morning, I was looking through my RSS reader and a post by The Pioneer Woman came up. She talked about how she had been in Albuquerque for a book signing. (I so wanted to go, but it wouldn’t workout in our schedule) and how she had eaten some green chile enchiladas and how amazing they were.
I have to agree with her that NM has the BEST enchiladas AND the best green chile anywhere… ever!
So as I scrolled through her mouth-watering photos I innitally had no intention of trying the recipe. I make enchiladas, they take some time and effort and well… time. But once I saw how quick and easy this version was, I knew what I was having for lunch today!
I love enchiladas!! LOOOOOVVVVVVVEEEEEE them! In fact they are my “go to” menu option at just about any Mexican food place we go. (Except Bear Wallow! DO NOT EAT THE ENCHILADA PLATE AT BEAR WALLOW!!! You have been warned. Don’t blame the consequences on me if you do! 😉
Anyway, this totally hit the spot! The onions were A-M-A-Z-I-N-G!! And of course the green chile was just….. just…. Ahhhhhhhhhhhhhhhh! You’ve got to try this!
