My “go-to” dish

I actually have several “go-to” recipes that I use on those occasions where I haven’t planned out my menu, or have ignored it till it’s nearly dinner time and too late to prepare. 🙂 Hey, it happens. I try to keep the items for this simple recipe on hand so that all I have to do is dash to the pantry, open a few cans and toss it all together. It also happens to be very tasty! 🙂

Penne w/ Spicy Chicken Alfredo

8 oz dried penne pasta (I use whole wheat)
1 jar (16 oz) Alfredo sauce (I use the cheap Wal-Mart stuff, cause you’re going to be improving the flavor anyway!)
1 can diced tomatoes w/ basil, garlic & oregano (I was skeptical of finding this the first time I made it, but what do you know it’s there!)
1 T Italian seasoning (I use slightly less)
1/2 t. red pepper flakes
Cooked chicken (about 12 oz)
1 can sliced black olives, drained (this can be optional, I’ve made it with and without and it doesn’t make that much difference. I happen to like black olives, some of my men do not.)
Shredded Parmesan Cheese (honestly I usually forget this, oops)

1) In a large pot of boiling salted water, cook pasta according to package directions. Drain well; return to hot pot; cover and keep warm.
2) Meanwhile, in a medium sauce pan, combine Alfredo, tomatoes, Italian Seasoning and pepper flakes over medium heat. Stir in chicken and olives. Bring to a simmer; cook for 10 min.
3) Serve hot over cooked pasta. Top with Parmesan
