I find it quite flavorful the way that I make it, but your additions sound good too! I had a problem with it not getting done once, but I think it was because the meat stuff had cooled. If I top it when it's hot and toss it in it's not a problem. But I always bake it till it's really golden on top. :)

I love green chillies in cornbread. I may have to do that next time. :)

I tried this tonight. Cuz James being off doing things is a great time to try new recipes. If it flops, only I have to eat it (well and Helen, but she's so unpredictable she doesn't count). I would say that if I made it for James I would probably add more salsa and season the meat with taco seasoning while it was cooking. James likes his food FLAVORED. I might also add a can of drained chilis to the cornbread. Speaking of cornbread, I baked this for 25 min and the middle was still undercooked. I think it has something to do with our high altitude. *grump* It happens with any recipe where I put batter over things.

Sounds great! I think I might come to your house for dinner since I think I'm just making tacos tonight. ;) I have ground beef that needs cooking and I'm so unimaginative about how to use it, ha ha! Let me know how your men like the stroganoff! ;)

It's in the crockpot now :). I kinda doubled up on the "saucy" part and used fresh mushrooms and stew meat. So I'm thinking, I may scoop out about half just before I put in the sour cream, and freeze half of it for use at a later date. I'll let you know how it turns out. Keep the recipes comin!

Hmmm, wonder if that would work as well without a sibling to play with. I don't have toy whiney problems, but I think she would benefit from some imagination time.

Yes, I know there are lots of LF options, but I think ultimately none of them would ever be as good as the "real" stuff. :) And almond milk is gross... just sayin'

Just in case you were wondering, there are many alternatives for lactose intolerant people. Helen was sensative for a good long while (I think she's mostly over it now). There's: Soy, Almond, and even Lactose free milk now! and problaby more that I'm forgetting. The L-F milk was the cheapest, so that's what we got (though in no way cheap).

Yeah, the can is 12. something, but obviously the "point" wasn't very important to me since I can't remember it. I do remember the 12 and thinking that I was jipping the recipe out of 4 oz, but it didn't seem to matter.

If I were as techno-geek as my hubby I'd find a way to have a printable version. Till that day, my suggestion is to copy/past into a wordprocessing application and then hit print. ;) It's a few more steps I know... and I'm so lazy I don't eve print the recipes I have pinned on pinterest.
