Toodle-oo Muffin Top

You all know how I have this hate-hate relationship with this low-carb diet thing. But as much as I hate to admit it, because I’d rather have an excuse to quit, it does work. Now I haven’t seen as much progress on the scale that I’d like, but one thing that I have seen progress in, is the decreasing muffin top! :) You know what a muffin top is right? Believe me you’ve all seen it… it’s also known as a spare tire. It’s that revolting jiggly mass that likes to attach itself to people’s midsection that is SO difficult to get rid of. Ugh! Something about having babies adds to the general flappyness of this region. Ha!

Anyway, it was this very muffin-top issue that I noticed in that “pictures never lie” photo! Yuck! It was motivation enough for me to give up carbs though, and now I’m happy that I have. Who knew that carbs always settle there? ;)

I still have a ways to go, and I there’s quite a bit of toning that I need to do… which I’m rather lazy about at the moment, though I have been doing the kettle bell and I’m sure that will help. BUT I should be doing Tabata or other cardio as well. I’ll get there… eventually. ;) For now I’m enjoying less muffin top and more loose clothing! Ha!

Tis the season for dry, flaky, cracked and painful skin! At least it is for me. This is a somewhat new state of affairs for me. New enough that I’m not really “used” to it yet. I was never the “dry skin” type as a teen. No, I had quite the opposite issue, and it was typical for me to be of shiny skin, and icky looking hair if I “skipped” a shower.

Now, I’m afraid to tell you for fear that you won’t ever want to sit next to me or be my friend again, I cannot shower every day. Even if I wasn’t a mommy with 3 young shower-stealers (believe me that’s what they are… the shower is the first to go when it comes to choosing that or more sleep, ha!) I still couldn’t, for my skin and hair’s sake, shower every day. I dry out terribly!!

Part of it has to do with the VERY minerally/hard water we have where we live, but part of it is just a changing life thing. Kids do weird things to ya! ;) And getting older does too, but I chose not not think of that as a real reason. Ha ha!

Anyway, all of that to say that my skin is in bad shape if I shower more than every couple of days. And my hair too! I actually can’t stand my “freshly washed” hair because it refuses to look nice! It looks SO much better the next day, or the next even.

So I’m learning to counter these moisture sucking terrors to my skin, but I have to admit that my hands bear the brunt of it. They are naturally more often in water as I do dishes, switch laundry, bathe kids, wash hands, they just don’t get a break. And then they do break. I get paaaaaiiiiinnnnful cracks in my fingers and especially my thumbs, and even the back of my knuckles when they get too dry. Oh and just as an aside, superglue works WONDERS for skin cracks on your fingers. Really!!

But I’ve invented (well probably not very original) a thing I like to refer to as momicures. I’m pretty sure the last manicure I had was the one I got before my wedding…. yep, 6.5 years ago! Wow! My poor hands have been so neglected. ;) Anyway, what I do is when I have chores to do around the house, which often happens, I slather up my hands with some THICK lotion, (my Hurb got me some great body butter stuff from BB&B and some thick Dr. Scholles foot lotion, and my sis-in-law gave me Avon’s Silicon Glove for Christmas and those all work fantastic!) or Vaseline will work in a pinch too, and put on my lovely rubber gloves. :) I have a pair that I use for icky chores, (like bathroom cleaning and such) that I drew a “yucky face” on so that I don’t get them mixed up with my dishes handling pair. I’m weird that way. But I wear the gloves while I do my chores, and when I’m all done my hands feel SO soft and moisturized!! It’s great!

I try to be conscientious about doing it all the time, because I’m the only one who suffers if I don’t, and believe me that ONE time of loading the dishwasher without gloves (and I don’t even pre-rinse all the dishes) can totally thrash my hands. So I keep lotion under the sink right next to the gloves so I have no “lazy” excuses and so far it’s making a big difference during this dry winter weather! So even if I’m just sweeping or dusting, I try to put on my gloves with lotion. That way I don’t feel all “dirty” like I have to wash my hands when I’m done, and I get some extra moisture at the same time.

Gotta protect that skin! It’s hard to crochet with rough hands! ;)

Snow Day

These pictures are old. We had a snow quite awhile back, but I’m just now getting around to putting the photos up.

The lads went outside to enjoy the snow, and as they were out there it started to fall! Myles right away stuck out his tongue to catch some of the snow! Ha ha ha! I never did figure out what snow tastes like when I tried this tactic as a kid. Not sure they did either, but I had fun catching a few of the funny moments with my camera.

If anyone wonders why Myles has oatmeal on his BACK, it’s because he had his shirt on backwards for breakfast and later fixed it. :)

There is a perfect little greasy hand impression in the carpet from when Ella had her adventure in petroleum jelly.

I spent a large part of the morning, cutting up, seasoning, portioning and freezing a bunch of steak that I found on sale at Safeway this week. If you know my “issues” with raw meat, you realize that this was quite an undertaking. ;) It’s done though, and I have quite a few meals ready to unthaw and fix up in the future. I have steak for Stroganoff (which is also simmering away in the crock-pot as I write, I can’t wait for dinner!!) thin cut steak, seasoned with spicy rub for fajitas, and a host of other packages, ready for stew or stir-fry or just tossing in the slow cooker to see what happens. :) It makes me feel good to have meat in the freezer. One of my goals for Feb is to only buy milk and perishable items for groceries. :) I’ll be “shopping” in our pantry and freezer for the rest! I got 9 different meat meal portions out of my $30 something purchase of meat, and several of those will likely do for more than one meal. Seems good to me!

The boys have a bunk bed in their room now. Thanks to my MIL and craigslist! It was a great find. They love it!! I had a bit of a hard time taking out their little toddler beds though. These little ones are growing too fast! I’m happy that they have bigger beds though, and their room looks better than ever!

I showed Ella her reflection on the back of a spoon, and it was hilarious to watch her making faces at herself on the little spoon! Ha ha ha!! That girl just cracks me up!

Ella has added the dining room table to her mountaineering skills. But she’s not content to sit on top, she has to stand and walk around. This is not good!

Can’t stand lies! I called a company recently about why it took so long to get a package that I had paid 2 day shipping on. Their response was that Fed-ex did try to deliver the package 2 times. HOWEVER, I happen to know that I was at home on both of those “supposed” delivery attempt days, and never heard or saw a fed-ex truck neither did I get a “failed delivery” notice. That irks me to no end!

Qade can whistle now. Have I mentioned that before? He’s very pleased with this new talent, and I’m pretty proud of him for figuring it all out at the age of 4! I’ve never been a good whistler, and I’m pretty sure I was older than 4 before I ever figured it out. ;) However, this amazingness has it’s downside, as he likes to “practice” whistling all the time. Whistling in the house or in cars and such drives me crazy because it kills my ears! So we’ve come to an understanding that he can whistle outside as much as he likes, but shouldn’t in the house. I still have to remind him, but he’s usually good about it.

I’m trying not to think of the ick factor of the boys choosing the dog house as a place to relax while they eat their snacks outside. Ugh, ugh, ugh! It’s not working!!

This is what happens when I’m not on Facebook. I write all of my would be status messages in one long blog post. ;) Oh well, I can’t say it isn’t better off this way. The only thing is that these posts tend to get pretty long, especially when I have to wait to publish them. We’ve been on internet rations for most of January since we blew through a lot of our bandwidth early on in the month. ;) Silly electronics! So it’s been easier to keep off of FB like I’m supposed to, but I have missed posting to my blog. I have several post that I’ve been writing over my “exile” that I will schedule to publish over the next few days. Enjoy! :)

Honey Garlic Chicken

This recipe caught my attention because of the picture. The chicken in it had such a lovely color and over the white rice looked so yummy!

I decided right away that I would make it at once! Slow cooker meals have a way of capturing my attention. :) I didn’t have any ketchup however, so I used THIS recipe. It was extremely sweet. Blah! I’m not a huge ketchup fan to begin with which is why we had none in our house, but this recipe was not one you’d want to dip your fries in. Because of that I cut down the honey by half. I also used chicken breast because I didn’t have thighs. I also didn’t have fresh Basil so I just didn’t bother with that spice. :)

I smelled this cooking all day and thought for sure it was going to be a huge flop. I can usually tell. ;) However, it began to improve toward the end, and when I asked Stu about it, he said it was good! I didn’t thicken the sauce, it seemed thick enough on it’s own. I served it over jasmine rice, and I think when I make it again I’ll add some broccoli to the last little bit of cooking time.

It had a very asian flavor to it, as in, you could totally imagine tasting it in a nice Chinese restaurant, not like China King, blah! ;) I did find it a tad salty, probably because I didn’t have low-sodium soy sauce, but that’s what I’ll use next time. And I might splurge and get some store bought ketchup too. ;)

All in all it was good and Qade was thrilled that he was going to get to eat “Chinese food” which is anything with rice. ;) Ha ha ha!! I’m trying to decide the best way to use the leftovers, though they are pretty good just reheated. I just like to make something “new” with them. :)

Honey Garlic Chicken:
1 1/2 pounds boneless, skinless chicken thighs
3 garlic cloves, minced or chopped
1/2 cup low-sodium soy sauce
1/2 cup ketchup
1/2 cup honey
(optional) fresh basil, shredded, for garnish

Place the chicken in the bottom of a 4-quart slow cooker. In a small bowl, whisk together the garlic, soy sauce, ketchup and honey. Pour over the chicken and cover.

Cook on low for 6 to 8 hours or high for 3 to 4 hours. Be sure to check the chicken periodically. My chicken was done after 5 hours on low. Remove chicken, place on a plate and tent with foil to keep warm. Transfer the remaining sauce to a saucepan and reduce down over medium heat until desired consistency is reached. I mixed a teaspoon of cornstarch with a tablespoon of water and added it to the sauce and continued to stir and cook on medium heat until it thickened up a bit.

Serve a little sauce over the chicken and garnish with fresh basil.

Coffee Catastrophe

I had a near death experience this morning when I went to poor my first cuppa coffee and realized that we were OUT of creamer. (ack!) I recovered fairly quickly however because I remembered the half gallon of Almond Milk in the fridge that I was going to attempt to “doctor” into decent creamer.

So into a big sauce pot it went with a good dose of honey and vanilla as well. I stirred and heated and taste tested and added another good dose of SUGAR and stirred some more. Then I poured some into my “I Shoot People” Nikon coffee cup, and added coffee.

BLAH! <—- is an understatement of how it tasted! Ick! It was SO bad that I poured the whole cup of coffee down the drain, and you know that has to be bad!

I’ve come to the conclusion that Almond Milk is just yucky, and I feel very sorry for people who are indeed lactose intolerant and have to seek those alternative solutions for milk. Yuck, yuck, yucky!!!

So the Almond milk joined the first cup of coffee down the drain. Hmmmm… now what’s a girl to do? In a pinch cafe’ au lait will work though it’s not my favorite. I put in the milk and sweetened it with agave nectar. It was fine, just not what my coffee palate really wanted this morning.

Suddenly, I remembered that I did indeed have some sweetened condensed milk and evaporated milk left in the pantry! I stopped nursing the less than satisfactory cup of coffee and took a mad dash to the pantry. Yay!

I tossed them together in the pot, careful to lick the sides of the sweetened condensed milk can as clean as possible, and heated them till combined with a dash or so of vanilla. I sloshed the rest of my cafe’ au lait down the drain to follow the rest of the unworthy coffee creamer attempts. It was like a dream come true when I used my “sweet cream” in the last cup that the coffee pot had to offer. Ahhhhhh, bliss!

I don’t know why it took me so long to think of that solution. Probably because I hadn’t really had any coffee yet. This last cup is SCRUMPTIOUS though, so I wouldn’t be surprised, if I were you, if I make myself another pot of coffee to enjoy it with! ;)

My boys request bed time songs each night. I’m just wondering how to make “Jingle Bells” sound like a lullaby! :)

I find it interesting that in this small town of 1500-ish people and about 7 churches, the only ones who have made their way out to ‘visit’ our house have been Jehovah’s Witnesses. They have braved the muddy road twice actually. Hmmmm…

Ella conquered the couch and the overstuffed chair yesterday! She’s been trying to scramble up them since the day she started cruising on them. Yesterday she was just as pleased as punch and you could totally tell that she was very proud of herself for getting up all on her own! The boys now have no safe space. ;)

I accidentally misread the recipe and added a tablespoon of garlic instead of a teaspoon. I guess we’ll all be safe from vampires tonight! Hopefully it’s still swallowable!

Happiness is finding the very last piece of dark chocolate in the freezer, just when you need it the most! :)

I have always associated bananas and spiders in my mind. So I guess it’s not surprising that I jumped back in alarm when I was reaching for a banana and “thought” I saw a black thing scuttle away. There was actually nothing there, yay! See, what happened was that when I was in K5 at a little Christian school in Colorado, we were all sitting round the lunch table when one kid said something about spiders “hiding” in the end of bananas. I’m not sure what he was referring to or where he got his information, but from that day I could never eat the very tippy end of a banana. Ya know, the last part at the end of the peel, I always break the banana off right before that last bite. ;) I know NOW that there are no spiders hiding in the ends of bananas, but the damage has been done, and I think it’s irreversible. I shall always be a last bite banana waster, and anything that even remotely looks like a spider, imaginary or not, around my bananas will be met with the same reaction. :D

While I was shopping for steak, that was on sale, at our “local” Safeway, someone approached me and asked if I wanted to buy his food stamps. I’m somewhat curious what he wanted to buy with the cash that he’d get for his food stamps, and sad at the same time that people put more stock in whatever else instead of food for their family.

I’m doing pretty good on my facebook fast. Especially since we’ve pretty much burned through our allotment of internet bandwidth for the month. ;) It always helps when you simply “cant” do the thing you’re not supposed to be doing. :) Ha! I do miss it though, but I’m finding it surprisingly easier than I expected.

Broccoli Chicken Casserole

This was a hit! :) We ate this on my “carb day” so I wasn’t cheating. ;) Qade liked it so much that he said, “We should have this for lunch!” Since he often takes issue with the lunch options that I give him, ha ha!! Ella, loved the stuffing part of it too and signed “more please” over and over till I was concerned that I wouldn’t actually get a bite. ;)

It’s an easy meal, and goes together in no time! Nice for a busy week night or a lazy weekend, either way. ;) We had some chopped cucumber for a side and some celery with Almond butter after. The boys LOVE celery with almond or peanut butter, just love it! And they’re pretty nuts about cucumbers, carrots, broccoli and any fresh fruit.

So here’s the casserole. Try it sometime, it’s yummy!

Broccoli Chicken Casserole:

1 1/2 c. water
1 pkg (6 oz) Chicken Stuffing mix
2 cups cubed cooked chicken (I cheated and used one 12.whatever oz can of chicken breast)
1 c. frozen broccoli florets, thawed (I didn’t thaw them first, ha)
1 can condensed broccoli cheese soup, undiluted (I actually had this, surprise surprise, but you could use the “cream of something” soup here instead)
1 c. shredded cheddar cheese

In a small saucepan, bring water to boil. Stir in stuffing mix. Remove from the heat; cover and let stand for 5 min.

Meanwhile, layer chicken and broccoli in a greased 11x7x2″ baking dish. Top with soup. Fluff stuffing with a fork; spoon over soup. Sprinkle with cheese.

Bake, uncovered, at 350* for 30-35 min or until heated through. (6 servings)

Zucchini Crescent Pie

I have made this with and without the crescent, and it’s wonderful both ways!! My men all love zucchini, and with the cheese and ham this recipe is a HUGE hit! When I made it sans crust I added an extra egg for stability sake, but I don’t know that it was really necessary. Stuart ate the leftovers for breakfast, and oh, the leftovers are better without the crust. :) BUT we only had one slice for left overs because this was such a hit, so if your kids are veggie lovers like mine, or even if they are not, they might like this one!

Zucchini Crescent Pie:

1 package (8 oz) refrigerated crescent rolls
2 medium zucchini, sliced and quartered
1/2 cup chopped onion
1/4 cup butter, cubed (I think I’ll use a little less the next time, but butter is yummy)
2 t minced fresh parsley (I didn’t have this, not eve dried, but didn’t miss it)
1/2 t salt
1/2 t pepper
1/2 t. garlic powder
1/4 t dried basil
1/4 t dried oregano
2 eggs lightly beaten
2 c shredded part-skim mozzarella cheese
3/4 c cubed fully cooked ham (I used deli ham sliced up and I didn’t mind the ham flavor at all, ha!)
1 medium Roma tomato, thinly sliced (I omitted this too, but let me know how you like it if you use it!)

1) Separate crescent dough into eight triangles; place in 9″ greased pie plate w/ points toward the center. Press onto the bottom and up the sides to form a crust; seal seams and perforations. Bake at 375* for 5-8 min or until lightly browned.

2) Meanwhile, in a large skillet, saute zucchini and onion in butter until tender’ stir in seasonings. Spoon into crust. Combine eggs, cheese and ham; pour over zucchini mixture. Top w/ tomato slices.

3) Bake at 375* for 20-25 minutes or until a knife inserted near the center comes out clean. Let stand for 5 min before cutting. (6 servings)

Some Observations

If you’re trying to cut dairy out of your diet, you probably shouldn’t plan meals that are chock full of butter and cheese. Just sayin’. :)

Almond milk is not so yummy in my coffee. :( I’m going to try to doctor it up with some honey and vanilla, but on it’s own it’s not very inspiring.

I’ve been having the dizzies for a couple of days. I really hate it when this happens because I feel so limited in what I can do. Ya know, if you can’t walk straight and keep running into walls, it makes it difficult to get through chores. I’m going to take some Sudafed after breakfast. That often helps since it’s generally a congestion thing with me. Although I’ve had a migraine kind of “lurking” in the wings too. Think I’ll take it a little easy today.

I designed some appointment cards for a couple of OB offices to use. They have a photo of a newborn that I took on one side with all of the office information and appointment time/date stuff on the back. They arrived from the printer this week and they look so awesome that I just want to keep them all! Ha ha! :) Hopefully this will generate some more Newborn bookings for us though since every preggo lady will be getting “next appointment” cards when they go.

I’m making yogurt today for the first time in quite awhile. Stu has asked for yo-cheese a few times, and the lads would like to have some I know. Just because I’m on a dairy fast doesn’t mean everyone else hast to be, right?

After 10 minutes (or maybe more!) of very vigorous stirring with the aid of a large spoon and a butter knife, and several slimy fingers later, I finally have my no-stir almond butter ready to spread and serve. Kind of ironic, no? ;)

Tomorrow is my carb-day. If I wake up and weigh less than I did today I’ll probably be moderate. If I’m not, I’ll likely go hog-wild, ha ha! Either way I’d like pancakes to make up SOME part of my day. ;)

So I lost 2 pounds this week. Which is typical for me on this diet. I feel like I should lose more considering how much “work” it is to go carbless. BUT I only did the Kettle Bell twice, so I should be happy I lost at all, ha ha! And I can deal with a 2 lb a week loss, it’s more likely to keep off that way.
