I still haven’t got all of my posts sorted out in my head… but don’t you worry they are on their way. Most of them have to do with resolutions, I suppose. I’ll be posting this week about my new year’s resolutions, and on that note. I will be “missing” from FB for the month of January. SO, if you do want to keep up, come visit this blog! Of course, there’s always good old fashioned e-mail and phone chats too. ;) If your a “fan” of my biz page(s) then you’ll see status updates there, because I can’t just let those go, but I will not be participating in the “social network” for the month of Jan…. and yes, it will be difficult, ha! But I’ll save all of that for one of my resolution posts next week. ;) Meanwhile here are just some random thoughts.

Is it a sign that your Christmas tree is too crispy when your boys start playing a game where they hike their shirts up and “poke” their bellies then fall down while screaming, “OWWWWW!”?? :)

Ella is going to be a lotion lover like her mommy. Every time she sees me rubbing lotion into my hands, she comes right over with her hands held out to “share” some. :) So I rub a little on her fingers then she walks around rubbing her hands together! SO cute!

Qade eats his cheese in itty bitty pieces. Seriously it can take him 20 min or more to finish one little bit of cheese. He tells me that it makes him “feel like spit up” to take bigger bites. That’s now his new “go-to” phrase when he doesn’t want to eat something, “I feel like spit up.” Said in a pathetically weak voice. So I’ll tell him to go to the bathroom and do it, and he replies that he can’t, so then I tell him to finish eating. Ha!

I’ve got January’s menu done… mostly. There are 3 days where I’m just at a loss for what to do. BUT that’s where repeat performances come in. ;) Ha! It was more challenging this time because I’m “low-carbing it” again for Jan. Yeah, more on that in a future post.

It doesn’t feel like it could possibly be New Year’s Eve!! The weather has been so mild, and I love that! The boys have been playing outside and we’ve gone for several family walks, pulling Ella da Bella in the wagon! It’s awesome. I would be totally thrilled if spring came in January this year!! :)

I’ve had a few ups and downs lately where I feel like everything I try is a complete failure. I know it’s not true, but ya know how those “blue” moments are… highly irrational. Anyway, I’m trying to refocus as we head into a new year. Hopefully it will look up… even in the blue moments. :)

After much deliberation, and some fiascos, I have finally come to the conclusions that I will NOT be the next Iron Chef. Not ever. So sad! Ha ha ha!

I was looking at Myles the other day and it struck me what a big boy he is becoming. Sometimes I fall into the habit of forgetting that he really is younger than Qade. They just do so much together, that they practically seem like twins. So I mentally shake myself and remember that he’s 17 months younger and at this age it is a BIG difference. Still, even so, he is getting so big, and so much fun to chat with! He’s a little ball of mischief, but he is a sweetheart too!

Speaking of getting big, Miss De Bella is starting to get to the end of her 12 month jammies. I noticed this week while struggling to zip up her squirmy self in the footie jammies that they are pretty well stretched to their max. I’m not sure I’m ready to move her up to 18 month clothes yet, but it might be necessary pretty soon!! *sigh*

Qade is getting to the point where it embarrasses or bothers him if people are talking about him. Especially if they are laughing about him. I remember having feelings like that myself, so I’m making a very strong effort to NOT chuckle at things that he does or says even if they strike me as funny. To him they are serious, and while I don’t want to take him as seriously as he takes himself, I don’t want him to think that I just make fun of him either. It’s a balancing act, but I know I can relate to where he’s coming from, if I stop to think. :) He’s as quick as a whip, and he remembers things better than any kid I know. I have to remember that he IS listening, even when I don’t think he is.

Well, that’s all I can think of for now, surprise surprise! Hopefully it’ll tide you over till tomorrow when the resolutions begin. Ha ha! Not that I’m deluding myself into thinking that you’re all that interested in MY resolutions, but it helps me to write them down. Since typing has become oh-so-much faster than writing, this is my way of journaling. Besides, if I know “everyone” is watching, it helps me be more consistent…. I think. ;)

This isn’t going to become a strictly recipe blog, don’t worry. I have SO many blog posts floating around in my head that I”m having a hard time writing ONE cohesive one. I think this evening I may let my fingers do the walking on my keyboard rather than crochet hook and get some of my thoughts out straight, ha! Good luck with that, right? ;)

Anyway, till then, jus so you’ll know I’m still alive, here is what we are having for dinner. And what I’ll probably be having for lunch for several days, it makes a bunch, and the leftovers are great! This is also a frugal meal, which can be made even frugaler if you soak your own beans. BUT I read a bunch of stuff once about Kidney Beans developing a weird, deadly toxin if you don’t soak them “just right” and ever since then I have only bought the canned kind. It could be totally off, but I don’t really want to kill my family… or myself, so I think I’ll stick to canned. Of course, you could probably substitute pinto beans too…

Taco Soup:

1 lb ground beef
1 large onion, chopped, cooked with beef
2 cans kidney beans
1 can corn
1 can ro-tel
1 can (15 oz) Tomato Sauce
1 packet taco seasoning mix
1 packet ranch dressing mix (I buy both of those mixes in large sizes from Costco, so it’s about 3T of each if that’s what you’re using)
1 1/2 cups water.

Combine all ingredients, bring to a boil and then simmer for fifteen minutes. Just dump in cans, liquid and all!

*NOTE*
The recipe says to dump in cans liquid and all. For some reason, this kind of turns my stomach. So if you’re qualmy like me and you need to rinse and drain first, then just up the water to about 2 cups. It is a soup, but I don’t like it to be TOO soupy. ;)

My “go-to” dish

I actually have several “go-to” recipes that I use on those occasions where I haven’t planned out my menu, or have ignored it till it’s nearly dinner time and too late to prepare. :) Hey, it happens. I try to keep the items for this simple recipe on hand so that all I have to do is dash to the pantry, open a few cans and toss it all together. It also happens to be very tasty! :)

Penne w/ Spicy Chicken Alfredo

8 oz dried penne pasta (I use whole wheat)
1 jar (16 oz) Alfredo sauce (I use the cheap Wal-Mart stuff, cause you’re going to be improving the flavor anyway!)
1 can diced tomatoes w/ basil, garlic & oregano (I was skeptical of finding this the first time I made it, but what do you know it’s there!)
1 T Italian seasoning (I use slightly less)
1/2 t. red pepper flakes
Cooked chicken (about 12 oz)
1 can sliced black olives, drained (this can be optional, I’ve made it with and without and it doesn’t make that much difference. I happen to like black olives, some of my men do not.)
Shredded Parmesan Cheese (honestly I usually forget this, oops)

1) In a large pot of boiling salted water, cook pasta according to package directions. Drain well; return to hot pot; cover and keep warm.
2) Meanwhile, in a medium sauce pan, combine Alfredo, tomatoes, Italian Seasoning and pepper flakes over medium heat. Stir in chicken and olives. Bring to a simmer; cook for 10 min.
3) Serve hot over cooked pasta. Top with Parmesan

Guess who forgot to take photos of the kids opening gifts on Christmas this year?? Not me! Okay, yeah, it was me. I did get it all “on tape” though. I was too distracted because of the special surprise gift that I couldn’t wait to give Stuart. :) We did get a few shots of the kids opening some of the gifts from their grandparents earlier though. So I’ll post a few of those later. Ha ha! Just know that they had a great Christmas and thank you all, Grandparents, Oma, and Uncles and Aunties for the wonderful gifts!

My surprise gift, which I was sure wouldn’t end up a surprise because my man is so sneaky that way, was the iPhone 4 S. I engaged the help of my dad-in-law to procure the phone, and then wrapped it up and tucked it under the tree. Fortunately Stuart had no idea that anything was “up” or he would have been pestering people to get the info out. He didn’t have a clue and when he opened it he just stared at it in shock for awhile, so I thought that he had figured it out. BUT he hadn’t, and was just surprised to see it sitting there in the box. Score one for me!!! :)

As you can imagine he will be playing with it for some time to come. He was asking the classic “Siri questions” earlier, like “Siri, Will you marry me?” and when she answered “We barely know each other” Qade piped up, “Why it said no each other?” ha ha!! Later when he wanted help to build the block castle that Oma gave him, he said to Stuart, “Will you help me build this, Dad. Siri is not there!” Ha ha ha!!! Cracked me up!

I might be a Siri widow for a while, but I’m glad that I was able to surprise Stuart with something that he really wanted, didn’t expect, and will use. It made my Christmas very happy!!!

I got plenty of fun loot as well! A knee length coat from Stu, now I need a red scarf to go with it, and some warm gloves that actually fit my huge hands! Yay for warm stuff!!! He also got me an ergonomic mouse for my computer, and an interval timer so that I can get movin’ again, and get in shape!

So I wanted to “hop” online “real quick” to shoot off an e-mail to someone. BUT our idiotic internet card is acting the rebel child today and while it “says” it has 4 bars, and my computer is “supposedly” connected to it, I can’t get one stinkin’ page to load! Somedays I loath living in the sticks!

Ella-girl is in that stage of self-feeding where most of her finger food/snack options are carbs. I mean think about it, what do you feed just walkers? Crackers, gold fish, biter biscuits, Cheerios. Unfortunately our gal “plugs” up easily. So I’m being more careful about giving her canned green beans or peas, and fruit and carrot cups. She can eat those too, albeit not as easily on the run. Still it’s worth it on the other end. ;) Trust me on that one.

My daughter is the diaper Houdini, and I’m convinced that she sticks her feet into her pants sideways when I’m trying to redress her, just to give her a little more time to get those tabs off!

If you cut your finger while slicing Oranges, it really hurts!!! (Not that I would ever be that clumsy with a knife, of course. Disregard THIS post)

The difficulty in getting kids to bed, and to sleep is in direct proportion to how utterly exhausted the parents are. Really!

The kids can behave like angels on special ‘days out’ like Sunday when we go shopping, go to church, go to see Massona. They will swim through the day happy as a lark, barely even noticing the lack of nap/rest. But the NEXT day, oh my! That’s part of why Monday’s are “recovery” days for us.

Our church did a little “kids” thing on Sunday where several of the kids read passages from Luke 2, and then they all sang “Away in a Manger.” It was cute, every last one of the kids involved, even the teens, had a little headband on with pictures that represented part of the Nativity scene, like a donkey, or sheep, or a wise man. Every kid that is, except our Qade. Later he told me that he didn’t want to wear one because he thought they “looked bad.” :D He’s such a particular and sensitive little dude. And even though I have sung “Away in a Manger” to them at bedtime lately, they didn’t sing along… not even a peep. In fact there was a scowl on Qade’s face that deepened as the little “program” went on. While Miles on the other hand was perfectly oblivious, holding his “candle” upside down and kept turning round to see other kids, or dancing a little in place. Stu and I were very humored and had to work hard not to laugh out loud. We were proud of our little participants. :)

So the “big storm” is going to miss us by just a little bit, and I’m so disappointed because I would love to have a white Christmas for once. Brown, wet, drab Christmases are just not the same. *sigh* Growing up in Colorado spoiled me. ;)

I watched “The King’s Speech” all the way through, never once figuring out that the actor who played “Bertie” was Collin Firth the same who played Mr. Darcy in the BBC version of Pride and Prejudice. I don’t know how this could have happened!

I’m about to rip our stupid toilet out of the floor and send it to the dump! Seriously!!

I just looked out my window and saw a Nuthatch, 2 different kinds of Junko, a beautiful Blue Bird, several Robins and a House Finch couple. :) The winter birdies are back!

So I somehow stumbled onto this article from Rockin’ Granola, and no, I have no idea how I ever end up where I do on the web…. it just happens. Anyway, I’m reposting some of her article because a lot of it sounds like me (except I crochet not knit)… and the rest of it I want to do too, especially the nap part ha ha! Ever, ever, ever get every single thing on my list finished. I’m pretty good at planning things and having good intentions, but I sometimes get overwhelmed and end up crossing things off of my To Do list. And that is perfectly okay.

I Do …
Hope that making ahead and freezing some meals will help us to avoid busy night drive-thru runs during the holidays.

I Do NOT …
Plan on beating myself up if I see the pizza guy during the month of December.

I Do …
Get to take a nap on Christmas day. It is becoming a tradition that Mom gets to take a nap during the afternoon. I love this!

I Do NOT …
Get to bed early enough on Christmas Eve. There are always a few last minute things I’m finishing up – wrapping, preparations for breakfast, something always keeps me up past my bedtime every year.

I Do …
Make many of the gifts we give.

I Do NOT …
Ever, ever, ever finish making everything on my list. If a project isn’t done by December 1st, I abandon it and start surfing etsy. There is always next year :-)

I Also Do NOT …
Make gifts for anyone who has ever sneered or turned up their nose at one of our handmade gifts. One snarky comment and it is gift card city from now on, and I think we’re both happier for it.

I Do …
In general feel pretty good about the quality and the quantity of the gifts our kids receive.

I Do NOT …
Think a single year has gone by where I haven’t had that moment on Christmas Eve where I look at the presents under our tree and worry if they will be enough.

I Do …
Make a holiday budget every year.

I Do NOT …
Ever have the amount of money to spend that I wish I did.

I Do …
Know what and who the holidays are really all about.

I Do NOT …
Have fully have the ability to resist the all of the temptation and consumerism that runs rampant this time of year. I’m working on it, but I am certainly not there yet.

I Do …
Plan that the weekend before and the weekend after Christmas will be spent with family. We happily travel all over the state during the month of December. I actually enjoy those trips, looking at the lights, listening to music, talking with my husband, seeing family and friends.

I Do NOT …
Travel on Christmas Day. I stay home in my pajamas with my kids and we love it, even though I know it hurts some people’s feelings and they don’t understand why we choose to stay home. Our door is open and friends and family are welcome, but we stay home.

I Do …
Quite a bit of holiday baking with the kids. We have a messy, sugary, good time.

I Do NOT …
Enjoy the clean up afterward.

I Do …
Admit that I may have an unnatural love of sequins when it comes to the holidays

I Do NOT …
Care if my husband is too embarrassed to be seen with me in public when I’m wearing my sequined Santa hat. Oh, yeah, I’m the lady at the grocery in the sequin Santa hat. Let your holiday freak flag fly, baby!

I Do …
Try every year to take a photo of the kids for our holiday card.

I Do NOT …
Think I’ve ever been entirely successful. (But I have a lot of fun trying)

P.S. On the creamy pork chop recipe I have a little note to add. If you are going to use bone-in chops like I did, I’d suggest taking the bone out first. :) While the meat was so tender and soft that it just fell right off the bones, little flecks of bone also fell off. They weren’t dangerous as it was very teeny pieces, but it’s no fun to be chewing along on such a delicious dish only to crunch your teeth down on something hard. Nopers! So there you go.

Analysis doesn’t really thrill my little heart. I’m not a geek, nerd, or pinhead. I don’t get all hyper about numbers and statitistics and charts and graphs. It’s all a little too much like *gasp* Math, and makes me start to have anxiety attacks if I think about it too hard! ;)

But I do find the Google Analytics site interesting. You can see how many times your blog is viewed and even the countries and CITIES that people are viewing your blog from! Wow! Big Brother is watching!!!

So out of curiosity I was looking at the numbers for my blogs, I have 2 remember???? Oh, you don’t? Well, stay tuned for my little commercial (or whine) later.

For THIS blog that you are laying your eyes on right now. My biggest “Country” fans are, the USA, of course, and Canada!! With a third being Ukraine. :) I don’t know of anyone in Ukraine, but welcome, happy to have you along. ;)

For the cities Albuquerque is the biggest with a second being Woodstock??? Where is that exactly? I’m very bamboozled by that one for sure. Anyway, there’s a good showing from Los Angeles and Prescott as well. :) Thanks for tagging along! What fun!

Anyway, now the commercial/whine. On my business blog at cdostudios.com I have had 2 visits….. from Brazil! This may be part of why I keep getting spam comments on that particular blog. Ha ha! Actually though, I did get 2 honest and genuine comments from a friend of mine recently, so I can’t be too down about it.

I just want to encourage you to “pop” over there to see what’s going on in my little photo-mind. :) There’s generally pictures involved on that blog, sadly lacking here. I just get tied up in the words over here and forget about pictures. *sigh* SO maybe if you combine the 2 in your reading you can get the words here and pictures there!!!

Can you sense the “begging” aspect yet? No? Okay how’s this….. PPPPPPPLLLLLEEEEAAAAASSSSSEEEEEEE come visit me on my other blog tooooooooooo!!!!! Please? :)

I like running orange peels down the garbage disposal. It smells amazing!!! :)

I made whole-wheat pancakes for dinner last night. They weren’t a huge success. I thought they were fine, but my Hurb has a prejudice against whole-wheat. The main reason I did is because all of our “white” flour is in a 50 lb bag in the cellar, and I forgot to go down there to get some. Ha!

There is less than an inch of snow on the ground this morning, but the lads saw it and their first response was, “I’m going to build a snow man!” Good luck to them! ;)

One of the kids’ gifts this year was “recordable” Christmas books from Halmark. Their Grandma and Grandpa Zahn recorded the books and they love to listen to the books being read to them. :) Fun gifts!

Qade asked me this morning, “What love means?” Hmmmm…. not sure I have a very easy to explain answer for that one. :)

One of the lads asked me recently, “Why water is wet?” I had a hard time with that one too. Apparently I did not get enough “book larnin’” to field all of these inquiring minds’ questions. Ha ha!

It boggles my mind that one of the ‘games’ the lads play the most is to make up beds anywhere and everywhere in the house and then take naps. BUT when it comes to real nap time or bed time it’s no game!

I’ve developed a bad habit of nearly burning my oatmeal. It’s happened several times now. I’ll watch it carefully till it’s almost done, then somehow I get distracted and totally forget about it till I accidentally see it and rush to catch it in the nick of time. My mind is going, I tell you.

I will not be winning any awards for patience this year. *sigh*

Some days the simplest things would “make my day.” Something like being able to empty the dishwasher in one fell swoop instead of being interrupted 17 times. :) One day I’ll be writing the reverse, I know, but today….

Made peppermint bark for the first time. That was exciting. :) The lads love that it has candycane in it and it got a thumbs up from Stu, so I’m calling it a success. ;)

Ella loves feeding herself green beans, though it can be rather gross when she decides to “talk” with her mouth full. Ha ha! Silly gal!

I had ‘action’ dreams last night. The first one I remember was like the “catch me if you can” story and people were after me, and I had to keep running and hiding from them. I don’t think that I ever impersonated a doctor though. The second one was more like a “Fantastic Four” kind of adventure. It was weird. I woke up very tired! ;)

I yelled at the cat today. He earned it though.

I need to make Ella’s stocking stuffer hat. I’ve made beanies for the lads, and now the lass needs one…. but I’ve been procrastinating, obviously. I suppose that’s what I could do with this evening. ;)

Okay… so maybe I will overkill this recipe thing, but I found this site the Healthified Kitchen and SOOO many of the recipes on there look delicious! This recipe we are eating for dinner is one of them. I’ve never been a pork fan, but this year I have really exerted myself to branch out. I still can’t stomach ham, but I have come a LONG way with pork roasts, chops and country style ribs! That’s nice too because it’s the cheapest meat to buy most of the time!!

Anyway, I kinda wish I had waited on this recipe because Stu isn’t going to be home for dinner. I forgot about that. I usually do something way easy… like spaghetti-oh’s when he’s not home. ;) BUT hopefully there will be some left for him to try because I already took a bite and it’s SO yummy! I didn’t have pork chop medallions do I used what was in the freezer, bone-in pork chops. The meat cooked up so tender, it just fell right off the bones when I stirred in the sour cream. The dog will be happy for the seasoned bones I have no doubt.

So anyway here’s the recipe, you really ought to try this one. It’s hardly any more bother than spaghetti-oh’s, but wow, the flavor!!!! I was planning to serve it over rice because we have a ton to use up, but at the last minute I opted for egg noodles. The lads seem to like noodles, and right now that’s one less battle I want to have to fight. :)

Creamy Slowcooker Pork Chops
Makes 4 Servings
Recipe adapted from AllRecipes.com

1 pound pork chops, boneless medallions
Salt, pepper and garlic powder to taste
8 tbsp all-purpose flour, seasoned with pepper, garlic powder and paprkia
1 large onion, sliced 1/4 inch thick
2 cubes chicken bouillon
2 cups boiling water
1 tbsp minced garlic, jarred
10 tbsp fat-free sour cream

Season pork chops with salt, pepper, and garlic powder to taste, and then dredge in 6 tbsp seasoned flour. In a skillet sprayed with nonstick cooking spray over medium heat, lightly brown chops. Meanwhile, boil water in microwave. Once boiled, dissolve bouillon cubes in water. Stir in garlic. Place chops in slow cooker, and top with onion slices. Pour sauce over chops and onions in crock pot. Cover and cook on high 3 to 4 hours. Once done, add sour cream and stir. If still too thick, use cornstarch/cold water to thicken. Serve over egg noodles.

Nutritional Information: 452 calories, 58 carbs, 7 fat grams and 36 protein grams.

P.S. (this is Rachel again) I couldn’t figure out where the rest of the flour went in this recipe, so I just dumped what was left of the “dredging” flour over the chops before putting in the onions and broth. Helps thicken things up. Oh, and I didn’t fry the chops first either, just tossed em in raw. :) One less thing to do, it all ends up cooked anyway! Hee hee!
